Preheat oven to 425°F.
Add the broccoli, onion and sweet potato to a large bowl and toss together in the olive oil and season with salt and pepper.
Spread out the vegetables onto a large sheet pan. Make 2 open areas for the tofu to go on the sheet pan.
Add the tofu to a bowl and season with salt and pepper.
Mix together the BBQ sauce, honey and vinegar and pour over the tofu. Toss together so that the tofu is evenly coated in the sauce. Transfer tofu to the baking sheet with vegetables.
Bake for about 30 minutes, until tofu is browned and the sweet potatoes are fork tender.
