Preheat oven to 400°F.
In a small bowl, mix together all of the spices with a pinch of sea salt and black pepper.
Lay out the vegetables on a sheet tray and toss together in 1 Tbsp of olive oil. Spread out in an even layer, then create 4 open spaces for the chicken to go.
In a bowl, coat the chicken in the remaining 1 Tbsp of olive oil. Place chicken onto the sheet pan in the open spaces.
Season the entire sheet pan with the spice blend. Sprinkle the garlic all over the pan and squeeze the lemon juice over everything.
Bake for about 25-30 minutes, until the chicken is cooked through.
Optional- garnish the sheet pan with cilantro, when it comes out of the oven.
