Heat a pan over medium heat. Add the oil, heat for 30 seconds and add the onion. Sauté for 3 minutes until softened.
Add the garlic and sauté until fragrant. Stir in the tomato paste, curry powder, garam masala, chicken stock, cubed chicken and a pinch of sea salt and black pepper. Bring to a simmer for 15 minutes, until chicken is cooked through.
Add the peas. simmer for 2 more minutes.
Heat the rice according to the directions on the package. Serve curry over a bowl of rice.
Add some fresh chopped cilantro or basil for an extra layer of flavor.
