In a large bowl combine the chicken, celery, apple, almonds and grapes.
To make the dressing, whisk together the dairy-free yogurt, mustard, juice of 1 lemon, salt & pepper. Pour the dressing into the large bowl and stir until mixed well.
It is ready to serve immediately, but it is best to let sit in the refrigerator for about 30 minutes to let the flavors combine.
Make this chicken salad the night before and serve in bibb lettuce cups or over a bed of your favorite lettuce for an easy lunch the next day.
