Preheat the oven to 400°F.
Heat a sauce pan over medium-high heat. Once warm, pour in the tablespoon of oil, and add the onions. Sauté until soft, about 5 minutes.
Add the spinach and saute until just wilted, another 2 minutes. Remove from heat.
In a mixing bowl, stir together the canned tomatoes, cumin, paprika, hot sauce, salt and pepper. Add the onion and spinach mix and stir to combine.
Spray some cooking spray on ramekins (or oven safe mugs) and divide this mix evenly between them.
Crack two eggs into each ramekin, then sprinkle on Feta. Bake in the oven until the whites are set and the yolks are still soft, about 15 minutes.
Toast the whole wheat bread to accompany the eggs.
